Eggplants (Solanum melongena)

A common vegetable in Mediterranean, Middle Eastern and Asian cuisine, it may be pickled, fried, boiled or baked. Sow a few seeds per pot indoors . inch (1 cm) deep in mid-sized pots well ahead of last frost as seeds are slow to germinate.
