Description

Also known as the oyster plant in North America or Shing in the Middle East it may be grown for either the tap root or the greens. This may be pulled or trimmed when small and prior to flowering as a salad green where it is delicious to twist the shoots and dip in balsamic vinegar or keep for end of season. The long tap root may be cooked a variety of ways and is said to taste similar to oysters. Direct sow about 2/3 inch or . cm deep and thin to 9 inches or 23 cm if desiring whole plants for the roots. Seed will often over winter under snow and sprout in spring as an early green. Warning, when sprouted and prior to flowering, it looks a lot like grass – if unsure about your planting, check for the tap root before washing and eating.
