Eggplants (Solanum melongena)
A common vegetable in Mediterranean, Middle Eastern and Asian cuisine, it may be pickled, fried, boiled or baked. Sow a few seeds per pot indoors . inch (1 cm) deep in mid-sized pots well ahead of last frost as seeds are slow to germinate. Transfer outdoors without disturbing the roots to either very large pots (3-5 gallon) or garden (1 . foot – 45 cm between). Use scissors or a knife to remove ready fruit and plants are fond of heat.
White and light purple stripped medium sized eggplants that are reasonably early. Tend to receive a one or two eggplants per plant per summer.
