Eggplants (Solanum melongena)
A common vegetable in Mediterranean, Middle Eastern and Asian cuisine, it may be pickled, fried, boiled or baked. Sow a few seeds per pot indoors . inch (1 cm) deep in mid-sized pots well ahead of last frost as seeds are slow to germinate. Transfer outdoors without disturbing the roots to either very large pots (3-5 gallon) or garden (1 . foot – 45 cm between). Use scissors or a knife to remove ready fruit and plants are fond of heat.
Baby Eggplants are highly productive, tiny black eggplants excellent for pots. Tend to give multiple crops over the summer months especially if the weather is warm.
