Every part of the plant omitting the spiny prickles is edible. Young leaves can be eaten directly as salad and sandwich greens while the older leaves and the stalk are better cooked. Leaves may also be dried to prepare tea. The unopened flowers are similar to artichokes and the pink/purple flower petals may also be chewed for flavour.
