Beet is a wonder vegetable in that all parts maybe eaten. Use the greens when small in salads and in sandwiches. Use the larger green leaves (rib removed) in cooking as a substitute for spinach or ‘rollers’ in dolma and ‘cabbage’ rolls. The stems may be sautéed or pickled while the beet root has a multitude of uses in cooking, canning and dying/colouring agents. Direct sow inch (1cm) deep in rows 1-1 1/2 feet apart (30-45 cm) apart after last frost. If wanting uniform beets then thin to 3 – 4 inches (7-10 cm) apart. Thinned plants may be eaten in their entirety. Reasonably rabbit resistant.
